Ingredients
100g desiccated coconut
50g vegan vanilla protein powder (unsweetened)
100ml creamy coconut milk
2 tbsp maple syrup
80g dark chocolate (sweetened with dates)
1 tsp vanilla extract
1 tsp coconut oil
Method
You’ll need: mixing bowl · grater
Stir the desiccated coconut, vanilla protein powder, creamy coconut milk, maple syrup and vanilla extract in a bowl until you have a firm mixture you can shape.
With slightly damp hands, shape the mixture into small bars and place them on baking paper.
Put the bars in the freezer briefly so they firm up and are easy to coat neatly in chocolate.
Melt the dark chocolate with the coconut oil over a bain-marie and stir until smooth. Turn the chilled coconut bars in it, let the excess drip off and put them back on the baking paper.
Let the chocolate coating set in the fridge until the bars are firm and easy to pick up.
Serve chilled and keep the rest in an airtight container in the fridge.
Good to know
If you love coconut and chocolate, these bars won't last long. No baking, little effort – and straight from the fridge, they taste especially good.
Swaps
Maple syrup → date paste (also provides some fibre; less runny). Dark chocolate → chocolate sweetened with coconut sugar (no refined sugar). Vegan vanilla protein powder → unsweetened pea protein plus a little more vanilla extract (often a shorter ingredient list). Coconut milk → unsweetened coconut yoghurt (slightly fresher, often a little thinner in texture).
Allergens
Contains coconut; depending on the chocolate or protein powder, there may be traces of nuts, soya or milk. For children, small portions only because of the caffeine in the cocoa; in pregnancy, usually fine with a moderate amount of chocolate.
