Whisk the eggs, milk, orange zest, gingerbread spice and half the cinnamon in a shallow dish. Cut the spelt bread into four slices, lay them in one after another and let them soak for 30 seconds per side.
Heat the butter in a frying pan and fry the slices over a medium heat for 2–3 minutes per side until golden brown.
Mix the yoghurt, honey, orange juice and the remaining cinnamon. Roughly chop the pistachios.
Place two slices of French toast on each plate, top with the cinnamon yoghurt and scatter over the pomegranate seeds and pistachios.
Good to know
French toast is the breakfast for day-old bread. For the holidays, you soak the slices in egg and milk with orange and gingerbread spice. Pomegranate seeds and pistachios on top make the plate festive.
Swaps
Spelt bread → day-old spelt rolls. Natural yoghurt → skyr (more protein). Honey → maple syrup. Pistachios → flaked almonds.
Cooking tips
Day-old bread soaks up the egg and milk without falling apart. Fry over a medium heat, otherwise the outside darkens before the inside is cooked.
Storage
Serve freshly fried; keep any leftover cinnamon yoghurt covered in the fridge for 2 days.
Allergens
Contains gluten (spelt), egg, milk and pistachios. Suitable for children; during pregnancy, fry the slices until the egg is fully cooked.
