Ingredients

Method

You’ll need: oven · frying pan · baking tray · chopping board · knife · sieve

  1. Preheat the oven to 200 °C (180 °C fan) and drain the chickpeas well. Peel the sweet potato and cut it into even cubes.
  2. Toss the sweet potato and chickpeas with olive oil and salt. Spread everything over a baking tray and roast at 200 °C for 20–25 min, until the sweet potato is soft and the chickpeas are lightly browned.
  3. Toast the pumpkin seeds briefly in a pan without any extra fat until fragrant. Wash the spinach and drain it well.
  4. Stir the olive oil, apple cider vinegar and mustard into a smooth dressing. Season with a small pinch of salt.
  5. Add the warm roasted veg to the spinach and toss everything loosely. Scatter over the pumpkin seeds and spoon over the dressing just before eating.
  6. Arrange the chickpea and sweet potato salad in bowls or on plates and serve lukewarm.

Good to know

A salad like this is quietly satisfying and still feels light. Warm roasted veg, fresh spinach and a punchy dressing simply go together neatly here.

Swaps

Pumpkin seeds → walnuts (more omega-3 fatty acids) | spinach → rocket (more savoury bitter compounds) | sweet potato → Hokkaido squash (similar fibre content, slightly milder) | apple cider vinegar → lemon juice (provides vitamin C)

Allergens

Contains mustard and, depending on processing, may contain traces of other allergens; well suited to children if the chickpeas are soft, and fine during pregnancy with freshly washed spinach and good kitchen hygiene.
