Ingredients
400 g chicken breast
1 tbsp lime juice (from an unwaxed lime)
1 cucumber
2 tbsp peanuts
50 ml coconut milk
1 tbsp olive oil
1 clove of garlic
1 piece of ginger (about 2 cm)
1 tsp sriracha (without added sugar)
3 tbsp soy sauce
Method
You’ll need: frying pan · chopping board · knife
Cut the chicken breast into cubes and toss with the soy sauce, lime juice and grated ginger. Leave to marinate for 10–15 min.
Thread the marinated chicken pieces onto skewers. If you're using wooden skewers, soak them briefly in water first.
Stir the peanuts or peanut butter, coconut milk, garlic, sriracha and a little soy sauce into a smooth, creamy sauce. Loosen with a splash of water if needed.
Halve the cucumber, scrape out the seeds and slice thinly. Mix with lime, a little olive oil, salt and pepper to make a fresh salad.
Heat olive oil in a frying pan and fry the chicken skewers until golden brown all over and cooked through. You can warm the sauce briefly alongside or serve it cold.
Serve the chicken skewers with peanut sauce and cucumber salad straight from the pan. Sprinkle with chopped peanuts if you like.
