Ingredients
400 g chicken breast
100 g bulgur wheat
4 tbsp hummus (made with olive oil, no seed oils, or homemade)
2 tomatoes
½ cucumber
1 onion
2 tbsp olive oil
2 tbsp lemon juice
1 bunch of parsley
1 tsp cumin
1 tsp paprika
½ tsp cinnamon
½ tsp turmeric
1 pinch of salt
1 pinch of pepper
Method
You’ll need: frying pan · chopping board · knife
Cut the chicken breast into strips and mix thoroughly with the cumin, paprika, cinnamon, turmeric, olive oil, salt and pepper. Leave to marinate briefly so the spices stick well.
Soak the bulgur wheat in boiling water for 8–10 min and leave it to cool a little. Meanwhile, finely chop the parsley, chop the tomatoes and cucumber small and finely dice the onion.
For the tabbouleh, mix the bulgur with the parsley, tomatoes, cucumber, onion, lemon juice and olive oil. Season with salt and pepper.
Heat a frying pan until very hot and fry the marinated chicken well until browned outside and cooked through inside. Then leave to rest briefly and slice.
Stir the hummus until smooth and loosen it with a little lemon juice if needed. Taste the tabbouleh once more.
Arrange the tabbouleh on plates, add the chicken alongside and a spoonful of hummus. Serve with extra lemon juice if you like.
Good to know
A plate like this feels like a lot of effort but is pleasantly easy. Spiced, fresh and satisfying – just right for days when it needs to be quick.
Swaps
Bulgur wheat → quinoa (a little more protein, gluten-free); chicken breast → skinless chicken thighs (a little juicier, a little more fat); hummus → mashed chickpeas with olive oil and lemon juice (less processed, with fibre); parsley → a mix of mint and parsley (fresher flavour)
Allergens
The dish contains gluten from the bulgur and sesame from the tahini in the hummus. For children, season mildly; during pregnancy, cook the chicken all the way through and make sure the hummus is fresh and well chilled.
