Cook the wild rice and preheat the oven to 200 °C (180 °C fan). Blanch the broccoli briefly, then drain well.
Cut the chicken into pieces and fry well in the olive oil until browned on the outside. Then take it out of the pan.
Soften the onion and garlic in the same pan. Stir in the stock and the soured cream or crème fraîche and simmer briefly with the thyme, salt, pepper and nutmeg.
Put the wild rice, chicken and broccoli in a baking dish. Spread the sauce over the top and mix everything lightly.
Sprinkle with Gouda or Emmental and bake at 200 °C for 15–20 min, until the top is golden brown and the sauce is bubbling slightly at the edges.
Serve hot, letting the bake rest briefly first so it sets better.
Good to know
A bake like this makes for a cosy evening. Warm, satisfying and just the thing when you want something easy and really good.
Swaps
Soured cream → Greek yoghurt (more protein, a little less fat) | Gouda → mozzarella (milder, often a little less fat) | Wild rice mix → brown rice (more fibre) | Chicken breast → turkey breast (similar protein content, usually a little leaner)
Allergens
Contains milk from the cheese and the soured cream or crème fraîche; usually well suited to children if moderately seasoned, and during pregnancy no problem as long as the chicken is fully cooked and pasteurised dairy is used.
