Good to know

Café chai is often just syrup with milk. Made at home, it tastes of real spices and is ready in a quarter of an hour.

Swaps

Milk → oat milk (vegan, then maple syrup instead of honey). Black tea → rooibos (caffeine-free). Cardamom → star anise. Honey → maple syrup.

Cooking tips

Briefly crush the spices in a pestle and mortar so they release more flavour. Cold milk froths better than warm.

Storage

The spice base without milk keeps for 3 days in the fridge.

Allergens

Contains milk; black tea has caffeine – use rooibos for children. In pregnancy, have no more than 200 mg caffeine a day (about 2 cups of coffee), from all sources combined.
