Method

You’ll need: blender · chopping board · knife · sieve

  1. Wash the celery sticks thoroughly and cut them into rough slices.
  2. Pick the parsley leaves and put them in the blender with the celery.
  3. Squeeze the juice of half the lemon over the ingredients and add the water.
  4. Blend everything on the highest setting until you can't see any fibres.
  5. Pour the juice through a fine sieve and serve chilled.

Good to know

Celery juice is a real classic among drinks with no sweetening at all. The lemon and parsley take the very bitter edge off the veg.

Swaps

Parsley → coriander (if you like the flavour, fresh coriander gives the drink a distinctly Asian, complex note).

Cooking tips

For this juice, use the paler inner sticks from the head of celery, as they taste much milder and more watery than the dark outer ones.

Storage

Because it contains very little sugar, this juice keeps for a really long time in the fridge. Just shake it well before drinking.

Allergens

Contains celery. Completely gluten-free, lactose-free and vegan.
