Ingredients
1 celery stalk
2 apples
1 piece of ginger (about 2 cm)
1 unwaxed lime
200 ml water
Method
You’ll need: high-speed blender · sieve
Wash the celery, apples, ginger and lime thoroughly. Roughly chop the celery and apples, and peel the ginger if needed.
Squeeze the lime and catch the juice. Remove any pips as you go.
Put the celery, apples, ginger, lime juice and water in a high-speed blender.
Blend everything on high until the mixture is even and creamy. If you like it runnier, blend a little longer.
If you want a smoother texture, pour it through a fine sieve.
Pour into a glass and serve straight away. Best drunk fresh.
Good to know
Sometimes a clear, fresh glass is just what you want. This celery apple juice tastes crisp and slightly bitter, with a subtle heat.
Swaps
Apple → pear (a little milder, also contains fibre). Lime → lemon (also provides vitamin C). Ginger → fresh mint (much milder, pleasantly fresh). Water → unsweetened coconut water (a slightly sweet, nutty note).
Allergens
Celery is one of the allergens that must be declared. For children, go easy on the ginger and lime; during pregnancy, normal kitchen amounts are usually fine, but if in doubt, check with your doctor.
