Ingredients
1 unwaxed orange
220g spelt flour
70g coconut sugar
130g butter
1 egg yolk
1 tsp ground cardamom
1 pinch of salt
Method
You’ll need: oven · grater · cookie cutters
Grate the zest of the orange and squeeze one half. Knead the spelt flour, coconut sugar, cardamom, orange zest and salt with pieces of cold butter and the egg yolk into a smooth dough.
Wrap the dough and chill it for 1 hour.
Preheat the oven to 180 °C (160 °C fan). Roll the dough out 4 mm thick on a lightly floured surface and cut out 36 stars.
Place the stars on two baking trays lined with baking paper and bake them one tray at a time at 180 °C for 8 to 10 minutes each, until the points are golden.
Brush the warm stars thinly with orange juice and leave them to cool on a wire rack.
Good to know
In Scandinavia, cardamom belongs in Christmas baking the way cinnamon does in Germany. With orange, the stars taste fresh and a little like citrus tea. The butter dough is quick to knead.
Swaps
Cardamom → cinnamon. Orange → lemon. Coconut sugar → maple sugar. Spelt flour → plain flour.
Cooking tips
For more aroma, crush 8 cardamom pods in a pestle and mortar and sift out the husks. The stars are thin, so check the oven from minute 8.
Storage
Keeps for 3 weeks in a cookie tin.
