Ingredients

Method

You’ll need: blender · chopping board · knife · grater

  1. Let the açaí purée thaw slightly and break it into pieces. Put it into the blender with the frozen banana and the plant milk or apple juice.
  2. Blend everything vigorously until the mixture is like sorbet. Use only enough liquid that the bowl stays thick enough to hold a spoon.
  3. Divide the mixture between bowls. Meanwhile, slice the banana and prepare the strawberries.
  4. Top the bowls with banana slices, strawberries, granola and desiccated coconut, and finish with a drizzle of honey or maple syrup.
  5. If you like more crunch, add the granola right at the end so it stays crisp.

Good to know

This bowl is cold, creamy and a real treat. It's all about texture, freshness and the little contrast between soft and crunchy.

Swaps

Honey → maple syrup (vegan and contains some minerals) | granola → gluten-free oats with nuts (often less added sweetness, more fibre) | plant milk → unsweetened almond milk | strawberries → mango (also provides fibre and vitamin C)

Allergens

Depending on the granola and plant milk, it may contain gluten, nuts or soya; for children, sweeten gently and watch out for hard toppings, and during pregnancy make sure the ingredients are hygienically safe and well chilled and the açaí is pasteurised. Contains: milk.
