Beef strips with broccoli in soy sauce
Beef strips with broccoli in soy sauce: a savoury wok recipe with tender beef, broccoli, ginger, garlic and sesame. Quick to make and easy for every day.
Cut the beef steak into thin strips. Peel the ginger and garlic and grate them finely.
Mix the soy sauce, sesame oil, maple syrup, ginger and garlic. Briefly marinate the beef strips in it.
Break the broccoli into small florets, blanch them briefly in salted water and refresh in cold water straight away. That way it stays tender-crisp and keeps its colour.
Heat olive oil or avocado oil in a wok or large frying pan. Sear the beef strips quickly over a high heat, without the marinade.
Add the broccoli and the rest of the marinade and toss everything briefly until the meat is glazed and the broccoli is hot.
Divide between plates and serve sprinkled with sesame seeds.
Good to know
When it needs to be quick, this is one of those dishes that simply delivers. Savoury, juicy and with just the right depth in the sauce.
Swaps
For the wok: avocado oil (heat-stable, mainly monounsaturated fats); maple syrup → date syrup (still use sparingly); soy sauce → tamari (often gluten-free and a little stronger in flavour); beef steak → chicken breast or tofu (lean protein or a plant-based protein source)
Allergens
Contains soya, sesame and gluten (soy sauce; tamari is gluten-free). For children, season mildly and cook the meat through; in pregnancy, also only use fully cooked beef.
