Beef mince and sweet potato pan-fry
Beef mince and sweet potato pan-fry: an uncomplicated one-pan dish with beef mince, sweet potato, red pepper, onion and olive oil – savoury, balanced and easy for every day.
Wash, peel and cut the sweet potatoes into even cubes. Deseed the pepper and dice it finely with the onion.
Fry the beef mince in a hot frying pan, breaking it up, until cooked through. Take it out of the pan briefly if needed.
Heat the olive oil in the pan and fry the sweet potato cubes until soft and lightly browned, turning now and then.
Add the onion and pepper and fry briefly until the veg softens. Stir in the paprika.
Return the beef mince to the pan and mix everything well. Season to taste with salt and pepper.
Serve hot straight away. A little fresh parsley on top goes well, if you like.
Good to know
A dish like this is often just what a busy evening needs. Warm, hearty and on the table without much effort. Honest, good food from the frying pan.
Swaps
Beef mince → turkey mince (usually a little leaner, still plenty of protein) | Sweet potato → squash (similarly mild, also provides fibre) | Red pepper → courgette (milder flavour, lots of water) | Olive oil → ghee (heat-stable and full of flavour; contains milk)
Allergens
The dish is naturally gluten-free and dairy-free, as long as you don't use ghee; none of the main allergens typically appear here. With mild seasoning, it's well suited to children, and in pregnancy it's important to always cook the beef mince right through.
