Beef and edamame stir-fry
Beef and edamame stir-fry with tender beef steak, shirataki noodles, edamame, pepper and sesame – quick to make, with plenty of protein and pleasantly light.
Rinse the shirataki noodles thoroughly in a sieve and drain well. Cut the beef steak into thin strips and the pepper into small cubes.
Heat the sesame oil in a large frying pan. Sear the beef strips briefly over a high heat until they take on colour.
Add the pepper and edamame and keep frying until the veg is tender-crisp and the meat is cooked. Stir now and then.
Fold the shirataki noodles into the pan and warm everything through briefly. That way the flavours come together without the noodles going soft.
Season the stir-fry with a little salt and pepper if you like. Then take it straight off the heat.
Spoon the keto beef and edamame stir-fry into bowls and finish by sprinkling over the sesame seeds.
Good to know
When it needs to be quick, I especially like pan dishes like this. Savoury, uncomplicated and without much kitchen chaos. And it feels pleasantly light, too.
Swaps
Beef steak → chicken breast (a little milder, also plenty of protein); edamame → broccoli (more veg volume and fibre); sesame oil → olive oil (more monounsaturated fats); pepper → courgette (milder, more watery and very low in carbs)
Allergens
Contains soya and sesame. Generally possible for children if they like the texture and everything is cut to suit their age; during pregnancy, thoroughly cooked beef and hygienically handled ingredients are important.
