Baumkuchen triangles (German layer cake) with spelt and honey
Baumkuchen triangles made with spelt flour, eggs, butter and honey, baked layer by layer under the grill and dipped in a cocoa glaze. A family-friendly dessert, 228 kcal per three triangles.
Separate the eggs. Beat the soft butter with most of the honey for 5 minutes until creamy and stir in the egg yolks one at a time.
Whisk the egg whites with the salt until stiff. Stir the vanilla extract and grated lemon zest into the butter mixture, mix the spelt flour and cornflour, and fold them in alternately with the stiff egg whites.
Preheat the oven grill to 220 °C. Spread 2 tbsp of batter thinly in a 25 cm loaf tin lined with baking paper and grill it on the middle shelf for 2 to 3 minutes until golden brown.
Spread the next layer on top and grill it the same way. Repeat until the batter is used up – that's about 12 layers in 30 to 35 minutes.
Let the cake cool, take it out of the tin and cut it into 36 triangles.
Melt the coconut oil with the cocoa and the rest of the honey, dip the triangles in it and leave them to set in the fridge for 20 minutes.
Good to know
Baumkuchen is seen as the supreme test of baking skill, but mostly it's patience: layer on layer, each one only two minutes. As triangles in a cocoa glaze, they're a gift everyone is happy to get.
