Banana and walnut bread without wheat flour or refined sugar
Banana and walnut bread without wheat flour or refined sugar: a moist everyday recipe with ripe bananas, almond flour, walnuts, eggs, cinnamon and coconut oil.
Preheat the oven to 175 °C (155 °C fan) and line a loaf tin with baking paper or grease it with a little coconut oil.
Mash the bananas thoroughly. Stir in the eggs, melted coconut oil and vanilla extract until smooth.
Mix the almond flour, baking powder, cinnamon and salt separately. Quickly fold the dry ingredients into the banana mixture and work in some of the walnuts.
Pour the batter into the tin, smooth the top and scatter over the remaining walnuts. Bake at 175 °C for 40–45 min, until the top is golden brown and a wooden skewer comes out clean.
Leave the bread to rest in the tin first, then carefully lift it out and let it cool completely on a wire rack.
Cut into slices to serve. It's especially good plain, with a little almond butter or slightly warm.
Good to know
When bananas are very ripe, this bread is often the best idea. It turns out moist, nutty and pleasantly soft – with no classic flour at all. The next day it tastes even more rounded.
Swaps
Walnuts → pecans (similarly nutty, a little milder in flavour) | Coconut oil → ghee (brings fat-soluble flavour compounds and a buttery note; contains milk) | Almond flour → ground hazelnuts (for variety; also contain vitamin E) | Vanilla extract → a small amount of grated tonka bean (aromatic)
Allergens
Contains eggs and tree nuts (walnuts, almonds). For children, serve in small pieces that are easy to chew; in pregnancy the ingredients are everyday foods – the only important thing is to bake the bread right through.
