Ingredients

Method

You’ll need: oven · baking dish · baking tray · chopping board · knife · grater

  1. Wash the sweetheart cabbage, remove any wilted leaves and cut it lengthways into wedges. Finely grate the ginger and slice the spring onions into thin rings.
  2. Stir the miso with the maple syrup, sesame oil, olive oil, soy sauce and ginger until smooth. The glaze should be thick and easy to spread.
  3. Lay the cabbage wedges on a baking tray or in a baking dish and brush them all over with the miso glaze. Sprinkle with sesame seeds.
  4. Bake the sweetheart cabbage in the oven at 200 °C (180 °C fan) for 30–35 min until soft and the edges caramelise darkly. If needed, turn briefly towards the end or brush with a little more glaze.
  5. Scatter the spring onions over the hot cabbage and leave for a moment. That way they keep their fresh flavour.
  6. Serve hot, ideally straight from the oven. Rice or a simple bean or tofu dish goes well with it.

Good to know

In the oven, sweetheart cabbage turns surprisingly tender and gets lovely roasted flavours at the edges. The glaze is salty, mildly sweet and pleasantly deep in flavour.

Swaps

Sesame oil → olive oil (more monounsaturated fats) | maple syrup → date paste (no refined sugar, some fibre) | soy sauce → tamari (often gluten-free, similarly savoury) | sesame → chopped walnuts (more omega-3 fatty acids than sesame)

Allergens

Contains soya and sesame, and gluten depending on the soy sauce; for children, season mildly and go easy on the salt, and in pregnancy it's fine when thoroughly heated.
