Ingredients
50 g rolled oats
100 ml oat milk
1 banana
1 handful of blueberries
1 tbsp peanut butter
1 tsp cocoa powder
1 tsp baking powder
1 pinch of salt
Method
You’ll need: oven · baking dish · mixing bowl
Preheat the oven to 180 °C (160 °C fan) and lightly grease a small ovenproof dish with olive oil. Wash the blueberries and peel the banana.
Mash the banana finely in a bowl and stir in the oat milk, peanut butter and cocoa powder until smooth. Fold in the oats, baking powder and a pinch of salt.
Put half the mixture in the dish and place the blueberries in the middle. Cover with the rest of the oat mixture so that the fruity centre stays juicy while baking.
Bake in the oven at 180 °C for 20 min, until the top is lightly golden and the centre looks just set. Let it cool briefly so the blueberry lava stays soft inside.
If you like, add a few more blueberries or a little peanut butter on top before serving. This makes the top even creamier.
Serve warm and spoon it straight from the dish.
Good to know
Tastes a bit like cake for breakfast, just more down to earth. Soft inside, lightly baked on top, with a fruity centre. The kind of recipe that feels cosy without much effort.
Swaps
Peanut butter → almond butter (provides vitamin E and a few more unsaturated fats); oat milk → unsweetened almond milk (often a little thinner); blueberries → raspberries (more fibre per serving); banana → unsweetened apple purée (a little less sweetness, still fruity)
Allergens
Contains peanuts and gluten (oats) unless the oats are certified gluten-free; good for children if the texture suits them and there is no nut allergy; during pregnancy the ingredients are normal and uncritical, as long as everything is fresh. Contains: gluten (oats).
