Baked oats with banana, berries, hazelnuts and cinnamon: a moist oven-baked breakfast with oat milk, natural sweetness and a nutty bite.
You’ll need: oven · baking dish · chopping board · knife · mixing bowl
A breakfast like this makes it easy to get something warm on the table in the morning. Moist and soft with a golden top, it feels more like a bake than classic porridge.
Oat milk → whole milk or unsweetened almond milk (more protein with whole milk, less starch with almond milk) Maple syrup/honey → date purée (fruity sweetness, less free sugar per serving) Hazelnuts → walnuts or almonds (more omega-3 with walnuts, more vitamin E with almonds) Olive oil/coconut oil → butter or ghee (more heat-stable, full flavour, no seed oils)
Contains tree nuts (hazelnuts) and gluten (oats, oat milk – unless labelled gluten-free). Usually well suited to children as long as nuts are given in an age-appropriate form, and during pregnancy the ingredients are common – just keep the cinnamon moderate.
Rolled oats mainly contain beta-glucans, which are soluble fibres. They also provide insoluble fibre, which adds to the total in the recipe.
Depending on the type, berries contain vitamin C, anthocyanins and other polyphenols. The exact content varies a lot with variety, ripeness and processing.
Hazelnuts mainly provide monounsaturated fats, vitamin E, copper and manganese. They also add some protein and fibre.
It varies from person to person. Honey contains fructose, among other things, and isn't suitable for children under 12 months; maple syrup mainly provides sugar and, in small amounts, some manganese.
In normal kitchen amounts, cinnamon usually agrees with people. If you use larger amounts very regularly, it's worth knowing that cassia cinnamon can contain more coumarin; Ceylon cinnamon is the milder choice here.
