At a glance

Ingredients

Method

You’ll need: oven · baking dish · chopping board · knife

  1. Preheat the oven to 200 °C (180 °C fan). Cut the red onion into rings and wash the cherry tomatoes.
  2. Place the feta in a small ovenproof dish or on baking paper. Arrange the cherry tomatoes and onion around the feta.
  3. Drizzle over the olive oil and honey. Season with thyme, chilli flakes and black pepper.
  4. Bake everything uncovered in the dish, or fold the baking paper into a parcel. Cook in the oven at 200 °C for 15–20 min until the tomatoes burst and the feta softens.
  5. Take it out of the oven briefly and spread the juices around the dish. If needed, press the thyme lightly so it releases more of its flavour.
  6. Serve hot straight away, ideally with a little bread, roasted veg or a green salad.

Good to know

A dish like this takes little work and still feels special. In the oven everything turns soft, juicy and wonderfully fragrant. Just right when you want it uncomplicated and good.

Swaps

Feta → goat's cheese | honey → date syrup (also provides small amounts of minerals) | red onion → shallots (milder in flavour) | thyme → oregano (also contains aromatic plant compounds)

Allergens

Contains milk from the feta; better to go easy on the chilli for children. During pregnancy, only use pasteurised feta and avoid cheese made from raw milk.
