Method
You’ll need: oven · baking dish
Wash the cherry tomatoes, peel the garlic and roughly tear the basil. Preheat the oven to 200 °C (180 °C fan).
Put the cherry tomatoes, garlic and feta in an ovenproof dish. Drizzle everything with olive oil and season with salt and black pepper.
Bake at 200 °C for 20–25 min, until the tomatoes are soft and the feta is lightly browned. Meanwhile, cook the brown rice noodles according to the packet instructions.
Stir the feta in the dish with the tomatoes and garlic until the sauce is creamy. Fold in the basil.
Add the brown rice noodles to the sauce and mix everything thoroughly. Adjust with salt, black pepper and a little olive oil if needed.
Serve the pasta hot, sprinkled with basil.
Good to know
Sometimes cooking can be simple and still taste really good. This dish is warm, creamy and just right for a relaxed evening.
Swaps
Feta → goat's milk feta, brown rice noodles → chickpea pasta (more protein and fibre), basil → parsley (also adds vitamin K), olive oil → avocado oil (milder flavour, heat-stable)
Allergens
Contains milk from the feta. The dish is only gluten-free if the brown rice noodles are clearly labelled gluten-free; it usually suits children, and during pregnancy it's no problem with pasteurised feta.
