Preheat the oven to 200 °C (180 °C fan) and cut the banana lengthways without cutting all the way through the skin.
Place the banana on a heatproof tray or in a small ovenproof dish and bake at 200 °C for 12–15 min, until soft and lightly caramelised.
Carefully open the hot banana in the middle and loosen the flesh slightly with a spoon.
Spread the peanut butter over the warm banana so it melts and turns creamy. Drizzle over the honey and sprinkle everything with cinnamon.
Scatter the chopped walnuts over the top at the end so they keep a little bite.
Serve the baked banana warm straight away, ideally straight from the skin.
Good to know
Sometimes the simple things are the best. Warm, soft and quick to make – a dessert like this feels like little effort and a lot of cosiness.
Swaps
Peanut butter → almond butter (more vitamin E) | Walnuts → pecans (milder, also contain unsaturated fats) | Honey → date paste (more fibre) | Banana → pear (a little more fibre, more mildly sweet)
Allergens
Contains peanuts and walnuts. For children, only serve with finely chopped nuts and in a way that's safe for their chewing; during pregnancy, the ingredients in normal cooking amounts are fine for most people, unless there are allergies or individual medical instructions.
