Preheat the oven to 200 °C (180 °C fan) and halve the avocado. Remove the stone and scoop out a little of the flesh to make enough room.
Set the avocado halves in a small baking dish so they sit steadily. Divide the smoked salmon between the hollows.
Crack the eggs one at a time and carefully add them to the avocado halves. Season with a pinch of salt.
Bake everything in the oven at 200 °C for 12–15 min until the egg white has set and the egg yolk is cooked to your liking. The baking time depends slightly on the size and ripeness of the avocado.
Take the baked avocado out of the oven and let it rest briefly. That way it keeps its shape better and the egg settles a little.
To serve, sprinkle with chives and enjoy warm straight away.
Good to know
When you want something uncomplicated that still looks special, this oven dish is just right. Warm, creamy and on the table in a few simple steps.
Swaps
Smoked salmon → oven-baked trout or smoked trout (similar protein content, usually a little milder). Chives → dill (goes well with fish and also contains plant compounds). Smoked salmon → feta (provides protein and calcium, but hardly any omega-3; contains milk). Salt → lemon juice and black pepper (a fresher flavour without added salt).
Allergens
Contains egg and fish. For children, only serve fully cooked. In pregnancy, bake until the yolk is firm and the smoked salmon is steaming hot all the way through.
