At a glance

Ingredients

Method

You’ll need: frying pan · baking dish · chopping board · knife · spatula

  1. Wash the apples, halve them or cut them into thick wedges and remove the cores. Roughly chop the walnuts and quickly pick over the raisins.
  2. Gently melt the coconut oil in a frying pan or ovenproof dish. Turn the apples in it so they're lightly coated.
  3. Scatter the Ceylon cinnamon, raisins and walnuts over the apples. Mix everything briefly so the flavours are spread evenly.
  4. Cook the apples gently until soft but still holding a little shape. The raisins turn juicy and the walnuts toast lightly.
  5. Finally, check that the cinnamon is evenly distributed and carefully toss the apples once more. This way the coconut oil combines with the apple juice released as they cook.
  6. Serve hot, with natural yoghurt if you like.

Good to know

This dessert is simple and comforting. Warm, soft and fragrant – just right when you want something easy and cosy.

Swaps

Raisins → diced dates (contain minerals, natural sweetness) Organic coconut oil → ghee (buttery flavour, heat-stable) Natural yoghurt → Greek yoghurt from grass-fed milk (creamier, also provides protein) Walnuts → pecans (milder flavour, goes well with cinnamon and apple)

Allergens

Contains walnuts (tree nuts) and, optionally, milk from the natural yoghurt. Suitable for children if the nuts are finely chopped, and in pregnancy fine in normal amounts, as long as all the ingredients agree with you.

Frequently asked questions

What's special about Ceylon cinnamon?

Compared with cassia cinnamon, Ceylon cinnamon usually contains much less coumarin. It mainly provides aromatic compounds, but no large amounts of the classic vitamins or minerals.

Which fatty acids are in walnuts?

Walnuts mainly provide polyunsaturated fatty acids, including alpha-linolenic acid. They also contain minerals such as manganese and copper.

Are raisins just sugar?

Raisins contain concentrated fruit sugars, but also fibre and a little potassium. Drying concentrates the nutrients per serving – and the sweetness along with them.

Does the natural yoghurt agree with everyone here?

That depends on how you personally tolerate it. Natural yoghurt contains lactose and milk protein, and depending on the type it also provides calcium and a little protein.

What's in apples apart from fibre?

Apples contain water, natural fruit acids and various polyphenols, which sit mainly in and just under the skin. There are also smaller amounts of vitamin C and potassium.
