Ingredients

Method

You’ll need: oven · baking dish · chopping board · knife

  1. Preheat the oven to 180 °C (160 °C fan) and lightly grease a small baking dish with coconut oil.
  2. Wash the apples and core them so there's room for the filling in the middle.
  3. Finely chop the walnuts and mix them thoroughly with the coconut oil, maple syrup and cinnamon.
  4. Spoon the walnut mixture into the apples and press it down lightly. Set the apples in the dish.
  5. Bake the apples at 180 °C for 25–30 min, until soft and the filling smells fragrant and looks golden brown.
  6. Serve warm, ideally straight from the oven. Finish with a little more cinnamon if you like.

Good to know

Baked apple is one of those desserts that instantly makes the kitchen feel cosy. Warm, soft and fragrant from the oven – simple and very homely.

Swaps

Walnuts → pecans (similarly nutty, a little milder in flavour) | Maple syrup → date paste (no refined sugar, also brings a little fibre) | Cinnamon → vanilla and a little cardamom (a different aroma)

Allergens

Contains walnuts (tree nuts), so it isn't suitable for anyone with a tree nut allergy; usually fine for children if the nuts are finely chopped, and in pregnancy the ingredients are everyday ones – adapt it, of course, for allergies or intolerances.
