Method

You’ll need: oven · baking tray · chopping board · knife

  1. Preheat the oven to 200 °C (180 °C fan). Quarter the apples, remove the cores and dice them.
  2. Mix the diced apple with the maple syrup and cinnamon and bake on a tray lined with baking paper for 20 minutes until soft and browned at the edges.
  3. Bring the water to the boil, pour it over the rooibos tea and leave to steep for 5 minutes. Remove the teabags.
  4. Slit the vanilla pod lengthways and slice the lemon. Heat the apple juice, tea, vanilla pod, star anise and lemon slices over a low heat for 10 minutes without letting the punch boil.
  5. Remove the vanilla pod, star anise and lemon and add the baked apples to the punch.
  6. Pour the punch with the apple cubes into heatproof glasses with handles and add a spoon to each.

Good to know

This punch tastes of baked apple without you having to stuff whole apples. You bake the apple cubes with cinnamon in the oven until they're nicely caramelised, then they steep in the hot juice. At the end, you spoon them out of the glass.

Swaps

Rooibos tea → fruit tea. Apple juice → half pear juice. Maple syrup → honey (no longer vegan; no honey for babies under one year old). Vanilla pod → 1 pinch of vanilla powder.

Cooking tips

Tart apples such as Boskoop or Elstar keep their shape in the oven. Don't let the punch boil, otherwise the vanilla turns bitter.

Storage

Once cooled, it keeps for 3 days in the fridge without the apple cubes; the baked apples keep separately for 2 days.

Allergens

Vegan, gluten-free, free from milk, egg, nuts and caffeine. Suitable for children and in pregnancy.
