Baked apple porridge with caramelised nuts
Baked apple porridge with caramelised nuts: creamy oats with oat milk, apple, cinnamon, maple syrup and walnuts – a warm breakfast with subtle toasted notes.
Wash and core the apple and cut it into small cubes. Roughly chop the walnuts.
Put the apple in a frying pan or wide pan with the water, cinnamon and maple syrup and cook briefly until soft, fragrant and slightly glossy.
Add the walnuts and toast them gently until lightly caramelised. Set a small amount aside for the topping.
Stir in the oats, oat milk and a pinch of iodised salt. Simmer everything over a low heat until the porridge is soft and creamy.
Stir now and then and loosen with a little more oat milk if needed. Finally, adjust the seasoning with cinnamon.
Spoon into a bowl while hot and serve with the rest of the caramelised walnuts.
Good to know
Tastes like warm apple cake in the morning, only simpler and fit for every day. Soft, nutty, cinnamony – just right for chilly days.
Swaps
Walnuts → pecans (similarly nutty, a little milder in flavour). Oat milk → unsweetened almond milk (often thinner and with slightly fewer carbs). Maple syrup → date paste (more natural sweetness plus a little fibre). Apple → pear (milder and also contains fibre).
Allergens
Contains gluten from the oats unless they're labelled gluten-free, as well as tree nuts from the walnuts; well suited to children with finely chopped nuts, and fine during pregnancy with fresh, cleanly prepared ingredients.
