  1. Preheat the oven to 190 °C (170 °C fan). Quarter and core the apples and cut them into wedges.
  2. Squeeze the lemon. Mix the apples with the lemon juice, raisins and half the cinnamon and spread them out in a baking dish.
  3. Rub the spelt flour, ground almonds, coconut sugar, the rest of the cinnamon, the salt and the cold butter, in pieces, together with your fingers to make crumbs.
  4. Scatter the crumble over the apples and bake for 30 to 35 minutes until the apples are soft and the topping is browned.
  5. Leave the crumble to cool for 10 minutes and serve warm.

Good to know

Baked apples take time, crumble is quick. Here you get both: apple wedges with raisins and cinnamon under an almond crumble. After half an hour, the whole flat smells like a Christmas market.

Swaps

Spelt flour → buckwheat flour (makes it gluten-free). Butter → coconut oil (vegan). Raisins → chopped dried apricots. Coconut sugar → maple syrup.

Cooking tips

The butter has to be cold, otherwise the crumbs turn into a dough. Tart apples such as Boskoop or Elstar taste like baked apples.

Storage

Keeps covered in the fridge for 3 days; 10 minutes at 180 °C makes it crisp again.

Allergens

Contains gluten (spelt), milk and almonds; no egg. Suitable for children and in pregnancy.
