Ingredients
1 ripe avocado
1 small cucumber
½ red onion
3 tbsp lime juice
1 mango
1 red chilli
2 tbsp olive oil
½ bunch of coriander
1 tsp maple syrup
Salt and pepper
Method
You’ll need: chopping board · knife · mixing bowl
For the dressing, stir the lime juice with the olive oil and maple syrup. Season with salt and pepper.
Peel and dice the mango. Halve and stone the avocado, scoop out the flesh and dice it too.
Chop the cucumber into small pieces. Slice the red onion into thin rings, then deseed and finely chop the red chilli.
Gently mix the mango, avocado, cucumber, red onion and chilli in a bowl. Pour over the lime dressing and carefully fold it in.
Roughly chop the coriander and fold it into the salad. Leave the salad to stand briefly so the flavours come together.
Serve cold, on its own or as a fresh side with grilled fish or chicken.
Good to know
A salad like this brightens up the table straight away. Creamy, juicy, fresh – and on the table in a few minutes.
Swaps
Mango → papaya (similarly juicy, with vitamin C and fibre); coriander → parsley (milder, with vitamin K); cucumber → fennel (more bite, and also contains fibre).
