Asian-style pan-fried teriyaki aubergines
Asian-style pan-fried teriyaki aubergines: tender aubergines in a savoury soy sauce with garlic, ginger, rice vinegar and sesame – quick, aromatic and easy on any weekday.
Halve the aubergines lengthways and cut into thick wedges. Dry-fry them in a large frying pan without any extra fat until they soften and colour lightly.
Finely grate the garlic and ginger. Stir both with the soy sauce, maple syrup, rice vinegar and sesame oil to make a savoury sauce.
Stir the cornflour with a little cold water until smooth and add it to the sauce. That way it thickens evenly later and turns glossy.
Take the aubergines out of the pan for a moment and heat the olive oil in it. Fry the aubergines again until golden brown on the outside and slightly crisp at the edges.
Pour the sauce over the aubergines and let everything reduce briefly until the teriyaki glaze coats the pieces. Meanwhile, finely slice the spring onions.
Plate up the teriyaki aubergines and sprinkle with the spring onions and sesame seeds. Rice or warm veg goes well with it.
Good to know
When aubergines are properly fried, they turn golden brown on the outside and almost creamy inside. That's exactly what makes this pan dish so good.
Contains soya and sesame. Fairly mild for children if you go easy on the ginger. During pregnancy, eat it well heated through and keep an eye on the salt content of the soy sauce. Contains: gluten (soy sauce).
