Ingredients

Method

You’ll need: frying pan · chopping board · knife · sieve

  1. Soak the glass noodles in hot water, then drain, rinse under cold water and cut them a little shorter with kitchen scissors.
  2. For the dressing, stir the peanut butter, soy sauce, lime juice, maple syrup and sesame oil until smooth. If needed, add a little warm water to make it creamy.
  3. Press the tofu well, dice it and fry in a hot non-stick frying pan without extra oil until crisp all over.
  4. Meanwhile, cut the carrot into thin matchsticks, and deseed the cucumber and slice it into thin half-moons. Briefly defrost the edamame or warm them in hot water.
  5. Divide the glass noodles between bowls and arrange the tofu, carrot, cucumber and edamame on top.
  6. To serve, pour the peanut dressing over the bowl and eat straight away.

Good to know

A bowl like this feels like little effort and lots of enjoyment. Fresh, creamy and with a really good texture. Just right when you want something simple but not boring.

Allergens

Contains soya, peanuts and usually sesame. Generally suitable for children if the tofu and veg are cut small, and no concern during pregnancy with good kitchen hygiene and fully heated tofu. Contains: gluten (soy sauce), peanuts, sesame.
