Ingredients

Method

You’ll need: frying pan · wok · chopping board · knife

  1. Cut the beef across the grain into very thin strips. That keeps it more tender when frying.
  2. Cut the pepper into strips, divide the broccoli into small florets and slice the spring onion into thin rings. Keep everything within reach of the hob.
  3. Heat the sesame oil in a wok or large frying pan until very hot and sear the beef quickly. Then take it out of the pan and set aside.
  4. Stir-fry the broccoli and pepper in the pan juices over a high heat until tender-crisp. Then return the beef to the pan.
  5. Add the soy sauce and toss everything briefly until the meat and veg are evenly coated. Fold in the spring onion at the end or scatter it over the top.
  6. Serve immediately, while the veg is still crunchy and the beef is juicy.

Good to know

When you're short on time, a stir-fry like this is worth its weight in gold. Hot, savoury and with just the right mix of bite and juiciness. A really good meal on the table without much effort.

Swaps

Sesame oil → olive oil (more monounsaturated fatty acids); soy sauce → tamari (often gluten-free, similarly savoury); beef → chicken breast (a little leaner, similar protein content); pepper → mangetout (also provides fibre and vitamin C).

Allergens

Soy sauce contains soya and usually gluten (wheat). Season mildly for children and cook the meat through; during pregnancy, use fresh produce and cook everything completely. Contains: soya, gluten, sesame.
