Press the tofu well, cut it into cubes and marinate briefly with a little soy sauce. Soak the glass noodles in hot water, drain and cut them a little shorter if needed.
Cut the carrot, pepper and mushrooms into thin strips. Finely chop the garlic and slice the spring onions into rings.
Heat the sesame oil in a wok or large frying pan and fry the tofu until golden brown all over. Then add the vegetables and garlic and stir-fry briefly over a high heat so everything stays tender-crisp.
Add the glass noodles to the pan and mix with the rest of the soy sauce. Toss everything well until the noodles have soaked up the sauce and are evenly seasoned.
Season to taste with chilli flakes and fold in the spring onions. Let everything get hot briefly and take it straight off the heat.
Serve immediately in deep bowls, garnished with fresh herbs if you like.
Good to know
A dish like this is on the table quickly and still tastes like a proper after-work dinner. Warm, spicy and pleasantly light without being boring.
Contains soya and gluten (wheat in the soy sauce); better leave out the chilli flakes for children, and during pregnancy make sure the tofu is heated through and the vegetables are freshly prepared. Contains: soya, gluten, sesame.
