Ingredients
300 g beef fillet strips
1 bunch of Thai basil
1 tbsp sesame oil
100 g mangetout
2 cloves of garlic
150 g jasmine rice
1 red pepper
1 tsp chilli flakes
2 tbsp soy sauce
1 tbsp fish sauce
Method
You’ll need: frying pan
Rinse the jasmine rice thoroughly and cook according to the packet instructions until fluffy and fragrant. Meanwhile, prepare the beef fillet strips, pepper, mangetout, garlic and Thai basil.
Heat the sesame oil in a large frying pan. Briefly toast the garlic, then stir-fry the beef fillet strips quickly over a high heat so they take on colour.
Add the pepper and mangetout to the pan and stir-fry briefly. That way they stay slightly crunchy and keep their fresh flavour.
Stir in the soy sauce, fish sauce and chilli flakes and toss everything briefly. Finally, fold in the Thai basil until the leaves just wilt.
Take the pan off the heat and leave it to rest briefly, so the sauce and roasted flavours coat the meat and veg more evenly.
Spoon the jasmine rice onto plates and serve the beef and basil stir-fry on top or alongside. Serve piping hot straight away.
Good to know
A dish like this is on the table fast and still tastes like much more than an everyday meal. Spicy, fresh and with that warmth you only get straight from the pan.
Swaps
Jasmine rice → brown rice (more fibre and minerals), beef fillet → chicken breast (lean protein), sesame oil → avocado oil (heat-stable, mainly monounsaturated fats), soy sauce → tamari (a gluten-free alternative with a similar flavour).
Allergens
Contains soya, fish and sesame (sesame oil); reduce the chilli flakes for children. In pregnancy, cook the beef right through and use fish sauce from a reliable source. Contains: gluten (soy sauce), sesame.
