A splash of elderberry juice turns this apple punch dark and adds a slightly tart berry note. The apple wedges infuse in the pan and are eaten with a spoon at the end. The punch suits children and adults alike.

Swaps

Elderberry juice → redcurrant juice. Apple juice → pear juice. Star anise → cardamom. Lemon → orange.

Cooking tips

Cloudy apple juice tastes stronger in punch than clear juice. Tart apples such as Boskoop keep their shape in the hot juice.

Storage

Without the apple wedges, it keeps for 3 days in the fridge once cooled.

Allergens

No gluten, milk, egg or nuts. Suitable for children and in pregnancy; only use bottled elderberry juice.
