At a glance

Ingredients

Method

You’ll need: chopping board · knife · mixing bowl · grater

  1. Mix the ground almonds, desiccated coconut and salt thoroughly in a bowl.
  2. Gently melt the coconut oil and add it to the dry ingredients together with the maple syrup.
  3. Mix everything with your hands or a sturdy spoon until you have a mouldable, slightly sticky mixture.
  4. Line a small tin with baking paper and press the mixture in evenly. Press the surface down firmly.
  5. Chill the tin until the mixture has firmed up noticeably and can be cut cleanly.
  6. To serve, cut into bars and store well chilled.

Good to know

These bars are quick to make and pleasantly simple. What I especially like is the moist, soft centre and the clear, nutty flavour.

Swaps

Maple syrup → date paste (more fibre, stronger flavour of its own); ground almonds → ground hazelnuts (more roasted flavour); desiccated coconut → finely chopped walnuts (more omega-3 fatty acids than coconut, less sweet in flavour)

Allergens

Contains tree nuts and isn't suitable for people with a nut allergy. For children, only offer them in an age-appropriate texture; during pregnancy the ingredients are usually fine.
