Ingredients

Method

You’ll need: chopping board · knife

  1. Remove the seeds from the pomegranate and cut the lemon into thin slices.
  2. Divide the ice cubes, rosemary sprigs and lemon slices between four glasses.
  3. Lightly press the rosemary in each glass with the handle of a spoon so it releases its aroma.
  4. Pour in the pomegranate juice and top up the glasses with sparkling water.
  5. Scatter in the pomegranate seeds and serve the spritz straight away.

Good to know

On New Year's Eve, not everyone holding a glass wants a drink with alcohol. This spritz looks just as festive as an aperitif, tastes tart and fruity and needs no syrup. It also suits January, when many people take a break from alcohol.

Swaps

Pomegranate juice → sour cherry or redcurrant juice (pure juice, unsweetened). Rosemary → thyme or mint. Lemon → lime. Sparkling water → chilled hibiscus tea (then without fizz).

Cooking tips

Use 100 % pure pomegranate juice, unsweetened and not from concentrate – not nectar. Pour in the sparkling water last and well chilled, so it keeps its fizz.

Storage

Serve fresh; juice and seeds stored separately, 3 days in the fridge.

Allergens

Vegan, gluten-free, no milk, egg, nuts, alcohol or caffeine. Suitable for children and in pregnancy.
