You’ll need: air fryer · chopping board · knife

  1. Peel the butternut squash, remove the seeds and cut it into 2 cm cubes. Toss with half the olive oil, the paprika and half the salt.
  2. Cook the squash in the air fryer at 200 °C for 12 minutes, shaking the basket after 6 minutes.
  3. Finely chop the garlic and chilli and mix them with the prawns, the remaining olive oil, the grated lime zest and the remaining salt.
  4. Add the prawns to the squash and cook everything at 200 °C for another 5 to 6 minutes, until the prawns are no longer translucent.
  5. Drizzle everything with lime juice, scatter over the chopped coriander and serve on the lamb's lettuce.

Good to know

Sweet squash, hot chilli and lime: you'll know the combination from Thai cooking. In the air fryer, the prawns need just 6 minutes. Frozen prawns work just as well if you defrost them first.

Swaps

Prawns → diced chicken breast (cook with the squash for 8 minutes). Butternut squash → Hokkaido squash (unpeeled). Coriander → parsley. Lamb's lettuce → baby spinach.

Cooking tips

Pat defrosted prawns thoroughly dry, otherwise they steam instead of frying. If you like it milder, remove the chilli seeds.

Storage

Best eaten fresh; leftovers keep for 1 day in the fridge.

Allergens

Contains crustaceans; gluten-free, with no milk, egg or nuts. In pregnancy, cook the prawns right through.
